Bali Fleur de Sel is a hand-harvested sea salt produced on the Indonesian island of Bali. It is collected from the surface of salt pans before it sinks, resulting in delicate, flaky crystals.
Heritage & Method
Amed is a working coastal village on the northeast shore of Bali, where volcanic shores meet the Indian Ocean and salt fields have been carved out for 150 years.
The salt fields sit where the volcanic coastline meets the Indian Ocean. Strong currents bring pristine, mineral-rich seawater; the equatorial sun is consistent and intense; the trade winds do the rest.
No factories. No industrial machinery. Generations of salt makers have developed an intimate knowledge of these conditions, learning to harvest at precisely the right moment for maximum crystal quality.
Seawater is drawn into shallow beds and concentrated by sun and wind. The finest, most delicate crystals form first and float on the surface, creating a layer of pristine white crystalline fleur de sel.
Before dawn — usually between 4am and 6am — the salt maker goes to the crystallisation pond with a traditional wooden tool, because humidity is highest in the early morning and the sun has not yet heated the air.
Zero chemicals. The seawater evaporates naturally. No bleaching agent, no anti-caking compound, no industrial additive at any stage from ocean to jar.
Many are in their 50s, 60s, or even 70s — which means they have been harvesting salt since childhood. Our commitment includes fair compensation, safe working conditions, education for their children, healthcare access, and long-term security.
Every batch is traceable to a harvest window, a named salt maker, and specific ponds. That transparency is not marketing; it is fundamental to our approach.
